Homemade Quesadilla

Ok.....we were having hot dogs for lunch, and I am not much for hot dogs!!!! So I got out my ingredients, and whipped up a quick and easy, but scrumptious quesadilla;
Recipe:
Saute thinly sliced onions in butter until golden brown. Set aside.
Prepare quesadilla by spreading cheese on tortilla, (preferably mozzarella cheese =)
Add fresh cilantro and sauted onions, and place another tortilla on top.
Grill until the top and bottom are both golden brown.
Lastly.......ENJOY!!!!!!

Doodle drawings on.....chipmunks!

I was doodling on scrap paper this afternoon, trying to draw chipmunks (for my book). I am a terrible artist, but it is sooo fun to doodle every once in a while.

Much to my dismay, Mom threw away her rose (for it never bloomed), so I had to ask Caelen if I could use her pet bamboo plant, Bob, for one last picture.

Ooey Gooey Butter Cookies

I got a hankering for butter cookies today.....not just any kind of butter cookies, but Gooey/delicious/amazing/mouth watering butter cookies. They are the best things that you could put in your mouth!!!!!
"Gooey Butter Cookies"
1 8oz. pkg. cream cheese
1/2 c. butter, softened
1 egg
1/4 tsp. vanilla
1 yellow cake mix
1/2 c. powdered sugar

DIRECTIONS:
Preheat oven to 350 degrees. In a medium bowl, cream together the cream cheese and butter. Stir in egg and vanilla. Add cake mix & stir until well blended. Powder sugar your hands well. Roll balls into 1" or 2" and roll balls thoroughly in powdered sugar. Place 1" apart on ungreased cookie sheets. Bake for 10 minutes. Leave on cookie sheet for 3 minutes or more before removing to cool on wire racks.
I NEVER, EVER have yellow cake mix on hand, so here is a recipe for it.
How to make Homemade Yellow Cake Mix:
(This is the standard size mix for recipes calling for an 18.25 ounce mix.)
2 cups all-purpose flour
1 1/2 cups sugar
1 tablespoon baking powder
1/2 cup non-fat dry milk
Combine flour, sugar, baking powder, and non-fat dry milk. Store in an airtight container or baggie. Keeps well in the pantry for months!
Use only 2 and ¼ cups of the mix in for the cookies. Store the rest.

A new blog background.....that stays!

Hey! I don't know if anyone has noticed how much I have been changing my blog background.....It is about to drive me nuts! So I am going to try to find a background /blog theme type of look so I don't have to switch up all the time! :) I'd LOVE to hear what you think about the new one, so please leave plenty of comments :D

Elizabeth Sealy Update:

I just wanted to let those of you who are praying for the Sealy family to know that Elizabeth is on her way home, and her pain has gone down a little bit. Thank you again for your payers!!! I will keep everyone updated as I receive news.

Urgent Prayer Request!!!!!!!!

Please pray for our Pastor's daughter, and my good friend Elizabeth Sealy who is six years old. We were sledding on Monday with the Sealy family and Elizabeth got the perfect straight run on a very steep hill, on a very fast sled. She ran headlong into a fence at a very great speed and broke her femur bone which happens to be the biggest bone in your body, and is supposed to be the most painful break a human can endure. The Sealy's got her to the Marion Hospital, and from there, she was transfered to Asheville Mission Hospital for surgery. She is still in the hospital, and in excruciating pain. The neat thing about this whole experience is that every time a nurse or a doctor comes into the room, she asks her mom to pray with her. All of the nurses, before they can even touch her, have to wait for her and her mom to finish praying. What a HUGE witness! So, please, please be in prayer for Elizabeth's family, and that her pain would go way down, and for her quick recovery. And please also pray that through this hard experience, people would come to know the Lord. Thank you for your prayers!!!

View from the Air Plane

My cousin, Rachel Cooke, asked me to blog again very soon, so this post is for her.
I found some more pictures from our trip on the air plane. I know a few people who have never been on a plane before, so this post is for them. When we were taking off, the people on the run ways slowly got smaller and smaller until they were just specks. Soon I wasn't able to see the houses or cars at all. Being up so high in the sky makes me marvel at our God......How he can see each and everyone of us, and furthermore... know our inmost thoughts! It is mind boggling!
